  4. 269: Matthew Caruana – The Sweet Keto Chef from Fabulously Keto, opens in a new tab

    Aug 20, 20261 hr 29 min

Matthew Caruana Matthew built a career in professional cookery, becoming a Head Chef and working internationally. A serious motorbike accident in 2016 pushed him to take control of his health, leading to an eight and a half stone weight loss through a ketogenic diet. He began creating and sharing keto desserts, which grew into a following and a recipe book. After losing his job in 2020, he turned that passion into a business, becoming the UK’s first artisan keto chocolatier and going on to win multiple awards. Key Quote “I definitely feel depression from eating carbs, which is a crazy thing to say. I feel so much more sluggish and, you know… when you actually put the carbs back in, you feel so much worse, physically and mentally.” — Matthew Caruana Matthew’s Top Tips Get a proper night’s sleep. It’s free, and it’s one of the biggest things that helps with impulse control around food. Remove the treats from your house. If there’s friction between you and the bad stuff (having to get in the car and drive to the shop, for example), you’re far less likely to break. Don’t punish yourself if you slip up. If you get carbed, go to bed, and the next day draw a line under it. Beating yourself up just spirals into eating more sugary things. Matthew’s Book Everyone Deserves Dessert — available exclusively via Matthew’s website (not on Amazon). Resources Mentioned The Daisy Garland — the charity that helped Matthew’s friend’s daughter access a therapeutic ketogenic diet for juvenile epilepsy. Siobhan Huggins — mentioned in relation to an intentional carb-reintroduction experiment. Know why you’re doing this before you start — if it’s a short-term fix, it won’t work. This has to be for the long haul. Don’t rush the process. You’re doing this for the rest of your life, so what’s the rush? It doesn’t matter if it takes longer than three months to get there. Don’t take life too seriously. 7. 266: Dave Mac – No Carb Life: Carnivore, Stroke Recovery and Getting Back Up from Fabulously Keto, opens in a new tab

    Jul 23, 20261 hr 10 min

Dave Mac Dave Mac is the host of the No Carb Life YouTube channel. He’s conducted over 1,900 interviews with people reversing chronic illness with a carnivore diet, and has personally followed the carnivore diet for nearly four years. Key Quote “I’ve interviewed people that have reversed or seen improvements with glaucoma. And a gentleman that was legally blind — after doing carnivore for a while — he saw his daughter for the first time in 10 years.” — Dave Mac Dave’s Top Tips Take it one day at a time. Don’t project into the future or think about how you’ll manage it for a year — just focus on getting through today without carbs. If you slip up, don’t beat yourself up — get straight back on track. Beating yourself up just makes it harder to get back on the wagon; treat a slip as past and move on immediately. Don’t try to do everything at once. Trying to start carnivore, OMAD, and extended fasting all on day one sets you up to fail. Just focus on carnivore first — the fasting side tends to happen naturally once you’re fat-adapted. 8. 265: Rosemary Laberee – Reversing Osteoporosis After 60 from Fabulously Keto, opens in a new tab

    Jul 16, 20261 hr 57 min

Rosemary Laberee Rosemary Laberee reversed osteoporosis in her sixties through heavy lifting, jumping, and a nutrient-dense low carb diet — and she’s here to tell you it’s entirely possible to do the same, even if it takes years. Key Quote “No one’s coming to save you when it comes to your bone health. You have to learn this. You don’t have any choice.” — Rosemary Laberee About Rosemary Laberee Rosemary has successfully reversed osteoporosis – in her 60s – by lifting, jumping and adhering to a very low carb, nutrient-dense, high protein/high fat diet. She brought every major metabolic marker into a superb range in the process. Her husband and four young adult kids urged Ro to take her story to Instagram. There, she is advising other women how to return their bodies to factory settings with proper movement and nutrition. Ro has a background in business, a master’s in health sciences, and just retired from her third career in a nationally recognized research institute. She takes special pleasure in helping other women understand that the principles of bone renewal – and of overall vitality and longevity – are simple. Guard your sleep, eat real food, pick up heavy stuff, and avoid stress. Rosemary’s Top Tips Your metabolic health is the number one thing for bone health — don’t wait for anyone to teach you, go learn it yourself. Don’t worry about how long it takes — you’ve got the rest of your life. Trust your own common sense — don’t let “experts” (often just operating out of expediency) do your thinking for you. Fall in love with the process, not just the result — craving stronger bones without embracing the hard work guarantees disappointment. What happens in the kitchen matters more than the hour in the gym — plan your meals in advance so you’re not making decisions (and bad choices) in the moment. Don’t buy into the belief that osteoporosis can’t be reversed — that’s a scarcity mindset, not science. Rosemary’s Books Mondays with Myrtle — Rosemary’s dementia diary, based on caring for her mother. Jul 8, 20262 hr 0 min

Mark Byford Mark Byford, the Bowler Hat Farmer, spent eight months and 12,500 miles touring the UK to meet the farmers, growers and producers fighting to bring real food back to our plates. He talks to Jackie about why 72% of our food is now imported, how farmers can turn a loss-making acre into a £30,000 one, and why eating seasonally and buying local could save British farming. Key Quote “We’re at that one minute to midnight. The clock’s either going to go one way or the other. If we don’t wake up very quick, we’re never going to see real food again.” — Mark Byford, The Bowler Hat Farmer About Mark Byford “Hi I’m Mark the Bowler Hat Farmer I’ve spent the past two years traveling from Land’s End to John O’Groats, visiting organic farms across the UK to explore innovative farming strategies. My passion for chemical-free food and sustainability.” Mark’s Top Tips Look after people on the way up, because you’ll need them on the way down. — advice Mark got from his old boss, Victor Kiam. “I’d rather earn 1% of 100 people’s efforts than 100% of my own.” — a quote from John Kalench that shaped how Mark thinks about collective change. Find out what makes you tick, then do good with that knowledge — Mark recommends reading The Secret. 10. 263: Amanda King & Hari Kuhan – Metabolic Drugs for Cancer from Fabulously Keto, opens in a new tab

    Jul 1, 20261 hr 28 min

Amanda King & Hari Kuhan Integrative oncologist Dr Hari Kuhan and metabolic nutritionist Amanda King join Jackie to talk metabolic therapy for cancer, why the ketogenic diet stresses cancer cells, and what’s in their new book, Metabolic Drugs for Cancer. “Apply the brakes on a growing cancer. Anything above that obviously is a blessing and brilliant, but that’s the number one.” — Dr Hari Kuhan “The ketogenic diet causes stress on cancer cells, and stressed cancer cells are weaker.” — Amanda King About Hari Kuhan Dr Hari Kuhan completed his undergraduate medical training at Imperial College London, where he also obtained a BSc in Surgery and Anaesthesia. He carried out his foundation and core medical training in Central London, with appointments at St Mary’s Hospital and St Bartholomew’s Hospital. Over time, he built substantial expertise in Medical Oncology, working at leading institutions including St Bartholomew’s, University College London, and the Royal Marsden Hospital. He then pursued a research fellowship at Barts Cancer Institute, London funded by Stand Up to Cancer and HCA Healthcare, focusing on metabolic vulnerabilities in cancer stem cells and circulating tumour cells through the use of repurposed medicines and Vitamin C. Expanding his reach into translational and clinical development, Dr Kuhan joined the Sarah Cannon Research Institute UK (Harley Street), London where he served as lead sub-investigator on multiple Phase I and II solid tumour trials, and became adept at integrating next-generation sequencing outputs into therapeutic decision-making. Motivated by both scientific innovation and patient-centred care, Dr Kuhan co-founded Lucio Health with long-time associate Raphael Swery, united by a vision to reshape cancer care for the 21st century. Together, they established a clinic that integrates precision oncology, metabolic targeting, repurposed medicines, and evidence-based integrative strategies—pioneering a personalised model that moves beyond the limitations of conventional, one-size-fits-all approaches. At Lucio Health, cutting-edge AI-driven platforms interpret complex mutational and molecular data, while functional sensitivity testing of blood and tissue samples reveals how an individual’s cancer responds to a wide range of agents in real time. These insights are then integrated with metabolic and genomic profiling to create multi-layered, personalised roadmaps for each patient—designed not only to identify the most promising treatments, but also to avoid those unlikely to help. The ambition of Lucio Health is to bridge the gap between laboratory science and lived patient experience: translating the latest advances in genomics, artificial intelligence, and metabolic oncology into practical, compassionate, and highly individualised care pathways. It is a clinic built on the belief that cancer treatment should be as unique as the patient facing it, combining clarity and scientific precision with humanity and hope. About Amanda King After earning her BSc through the Open University that combined Human Biology with Psychology and Counselling, Amanda King advanced her clinical training through the College of Naturopathic Medicine in London, qualifying as a Nutritional Therapist in 2022 and as a Naturopathic Practitioner in 2024. Most recently, she completed the Practitioner Master Course in Integrative Metabolic Oncology with the Metabolic Terrain Institute of Health under Dr Nasha Winters, further deepening her expertise in terrain-focused cancer care. Over the past decade, Amanda has honed her practice at the intersection of nutrigenomics, methylation science and epigenetics, integrating advanced lab diagnostics with personalised nutrition, therapeutic ketogenic and ancestral diets, and targeted supplementation to optimise each patient’s metabolic landscape. A certified nutrigenomics practitioner with training in Integrative and Gestalt psychotherapy, she is widely regarded for translating complex genomic and hormonal data such as DNA methylation panels and DUTCH hormone testing into pragmatic nutrition and lifestyle protocols that address both biochemical individuality and psychological wellbeing. In her integrative oncology nutrition practice, Amanda delivers bespoke protocols that weave together diet, lifestyle optimisation, mindset coaching and evidence-based complementary therapies, empowering patients to navigate cancer with clarity and agency. Committed to reshaping the dialogue around food as medicine, she collaborates with metabolic oncologists, functional laboratories and patient-advocacy groups worldwide to expand access to precision, nutrition-centred oncology care and to generate rigorous outcome data that will elevate the standard of integrative cancer support. Amanda’s Top Tips Prioritise your sleep — it affects everything else. Try Byron Katie’s “The Work” (thework.com) to question your stressful thoughts when you wake at 3am. Take regular breaks completely off-grid, away from your phone a Hari’s Top Tips When a spark of inspiration to change something hits, ride it — don’t wait for the perfect moment. Educate yourself about your condition: ask questions, look into your scan reports, tumour markers, mutations, and trial options rather than accepting “there’s nothing you can do.” Make time to step away from the daily grind and be present with your family — don’t let life become just work and stress. Maia Sutherland Maia Sutherland says: I was a life-long vegetarian, now however I’m mostly animal-based with far too much actual fuel going to my brain, I have become utterly obsessed with the topic and have written a book hoping to inspire people to spend parts of their life in ketosis and reduce their disharmonies. I can now say I am an author. I am the author of Metabolic Mayhem. The intention of the book is that anyone from any country, religion, education and budget, can benefit from applying what is laid out inside it. I also make a superb line of unique jewellery often combining precious stones with 2000 year old beads and some gold! Since being mostly carnivore for the first time in my life I can sleep through the night, and do maths. I marvel at how it buffers mental states such as depression and anxiety. Perhaps because I have more mental energy to think, I am more angry, or perhaps that is the peri-menopause which is a whole other conversation. I am totally in love with the subject of health, and through keto, carnivore and low carb, my understanding has gone through a huge upgrade. I am also a trained acupuncturist since 2002 and was a masseur for 12 years. Link to Show Notes on Website https://fabulouslyketo.com/podcast/260 Maia’s Top Tips Be kind to yourself. 19. 254: Nicki Thompson – Fasting With Nicki from Fabulously Keto, opens in a new tab

    Jan 22, 20261 hr 8 min

Nicki Thompson Nicki Thompson has spent over 20 years working in health and fitness, with experience spanning personal training, group fitness coaching, health coaching, and gym management. Her journey began when she was first introduced to the gym in her early twenties, sparking a passion for fitness that never left her. Despite outwardly appearing “in shape,” Nicki’s relationship with health was far from balanced. Behind the discipline, calorie tracking, and intense training, she was caught in a cycle of extreme restriction followed by secret bingeing, driven by control rather than self-care. No matter how much she knew about nutrition and fitness, lasting change felt out of reach. Everything shifted when Nicki turned her focus to mindset, habit change, and the psychology of behaviour. She discovered that willpower is limited, and that real transformation comes from self-awareness rather than force. Fasting became a pivotal tool in her own healing. Beyond the physical benefits, it offered clarity, calm, and the space to observe patterns without judgement. This reframing of fasting as a practice of awareness, not punishment, became central to her approach. Nicki is now a certified Functional Nutrition Health Coach, Cognitive Behavioural Coach (CBT), Rational Emotive Behavioural Coach (REBT), and Goal Success Coach. She specialises in helping women step out of all-or-nothing cycles and build sustainable health grounded in self-trust, flexibility, and long-term progress. Link to Show Notes on Website https://fabulouslyketo.com/podcast/254 Nicki’s Top Tips Set a goal, decide what that is, what you want and what’s the bigger vision that you see for yourself.
